
Camas Davis
Camas Davis (2015), an experienced magazine editor and food writer for magazines such as National Geographic Adventure and Saveur, is a skilled butcher and the founder of the Portland Meat Collective, a unique school and culinary resource that has changed the way citizens of Portland, Oregon, think about their food, their community, and their local economy. In 2014, she started the Meat Collective Alliance, a nonprofit dedicated to changing meat production and consumption in America. She once was a vegetarian.
She is completing a book, under contract to Penguin, about the ethics, economics, and esthetics of producing and preparing meat for the American table.
